You spoke – here’s the recipe to Mums delicious, guilt free no nasty MAYO <3
This is definitely “a to taste” recipe, so if you think it needs more of one thing or another, go for it!
YOU WILL NEED
- 4 EGG YOLKS
- 2 TEASPOONS OF DIJON MUSTARD
- 3/4 TABLESPOONS OF APPLE CIDER VINEGAR
- 1 TABLESPOON OF LEMON JUICE
- 400 ML OLIVE OIL
- YOUR CHOICE OF SALT (WE ALWAYS USE HIMALAYAN) AND BLACK PEPPER (AM A FAN OF CRACKED TOO BUT UP TO YOU)
PUT EGG YOLK, VINEGAR, MUSTARD LEMON JUICE, OIL AND SALT IN A GLASS JUG AND USE A HAND HELD BLENDER TO MIX. REMEMBER TO START AT THE BOTTOM OF THE MIXTURE AND WORK YOUR WAY UP – IF YOU DONT DO SO YOU MAY END UP WEARING YOUR DECONSTRUCTED MAYO LOL – THEN CRACK IN THE REST OF YOUR SALT AND PEPPER.
Unfortunately, due to the Dijon mustard ingredient its not GF or DF however there is only small amounts in here and hasn’t yet upset my stomach or symptoms – however every person is different.
& there you have it, that quick and easy its ridiculous! This mayo will last unto 5 days in the fridge along as its covered, and don’t forget to store it in a glass containers to prevent BPA leaking into your beautiful home-made mayo.

Make with whatever – chicken, fish, falafel or just veggies! Mix in your choice of spices (I would use some cayenne pepper and cumin, siracha sauce or both) into some of the mayo and then mix this through your salad or slaw, chuck in some soft shell tacos, add your other toppings and viola = perfect meal for lunch or dinner that can feed a tribe!
HOME MADE SUSHI
Roll up some cauliflower rice & veggies in some seaweed and chuck on some mayo, OR have a deconstructed sushi bowl and top it off with your home-made goodness, YUM
BURGERS & BUNS
Use as your choice of sauce for you and your families lunch options!
Broccoli, cranberries, nuts, spinach, carrot, red onion and mayo.
